Ingredients:

  • 4 slices brioche bread cut into halves or sticks
  • 2 large eggs
  • ¼ cup pumpkin purée
  • ¼ cup whole milk or milk of choice
  • 1 tsp cinnamon
  • ½ tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • ¼ tsp ground nutmeg
  • Butter or coconut oil spray for cooking

Instructions:

  1. In a shallow bowl, whisk together the eggs, pumpkin puree, milk, spices, and vanilla.
  2. Dip bread into mixture, coating well but not soaking.
  3. Heat skillet over medium, grease lightly.
  4. Cook 2–3 minutes per side until golden brown.
  5. Cool slightly before serving.
  6. Slice into sticks, halves, or bite size pieces
