Yields: 6 popsicles 

Cookware / Tools:

  • Baking sheet
  • Parchment paper
  • Popsicle sticks
  • Small bowls

Ingredients:

  • 3 bananas, halved
  • ½ cup vanilla or plain greek yogurt
  • ¼ cup blended freeze-dried strawberries (creates a red “snow” look) (*See Note 1)
  • 1 ½ cups shredded coconut (*See Note 1)
  • 2 tbsp holiday sprinkles

Instructions:

  1. Line baking sheet with parchment paper.
  2. Carefully insert popsicle sticks into banana halves, pushing slowly to ensure the banana doesn't separate.
  3. Dip bananas in yogurt, coating evenly.
  4. Roll in blended freeze-dried strawberries. (*See Note 2)
  5. Sprinkle each banana pop with ¼ cup of shredded coconut.
  6. Sprinkle with holiday sprinkles on top.
  7. Freeze 1 hour until firm.

Notes:

  1. The combination of the freeze dried strawberries and shredded coconut gives the pops a festive finished product with a lot of added texture.
  2. This works best when placing the freeze dried strawberries in a blender so it’s almost in a powdered form. If the strawberries are too chunky, they’ll have a harder time sticking to the yogurt on the bananas.
